Unesa.ac.id, SURABAYA-Tofu is one of the popular commodities and is in great demand by the Indonesian people. Tofu producers are also scattered in various regions, including in East Java. In order to help tofu producers, the UNESA Lecturer Team recently transferred technology to one of the tofu producers in Magetan.
The transfer of technology is the initiation of Dr. Warju, M.Pd together with its members consisting of Dwiarko Nugrohoseno, S.Psi., M.M and Lutfi Saksono, S.Pd., M.Pd. This community service was then proposed as a Community Partnership Program (PKM) and received funding from the Directorate of Research and Community Service for the 2021 Fiscal Year.
Warju said that the PKM was an effort to transfer technology in the form of designing a soybean grinding machine into tofu porridge, conducting business bookkeeping training and designing tofu product packaging. "Not only training, but we also provide ongoing assistance," he said.
The technology transfer involved one of the partners in Magetan, namely Tahu Magetan Juan Berkah located in Cepoko Village, Panekan District, Magetan Regency. Warju said that many tofu producers still maintain a very traditional production pattern, which affects capacity, hygiene, and productivity. In addition, the packaging also tends to be modest and less attractive.
Meanwhile, on the other hand, the demand for tofu commodities in the community is quite high and competition between producers is also competitive. For this reason, they are trying to help tofu producers in the form of technology transfer to increase the productivity of tofu producers in Magetan. "The process of making new tofu is quite long, if it is still traditional it will take a long time, so we are trying to transfer technology so that the production process is more effective, efficient and productivity increases," he said.
The efforts they have made are, 1) design, training, and assistance with appropriate technology (TTG) for grinding machines to increase the capacity and hygiene of tofu production, 2) provide training and assistance in the preparation of simple financial reports, and 3) carry out packaging design. tofu products to increase competitiveness and maintain the durability of tofu products at the time of delivery to consumers. "We also handed over the tofu production material milling machine," he said.
According to him, small industries must continue to be encouraged through cooperation and the important role of stakeholders. This is because small industries are part of the backbone of the Indonesian economy. The government and universities must collaborate to encourage the development of small industry players. "If small industries progress and develop, the supply of tofu commodities can meet needs, and employment opportunities can continue to grow," he said.
The intervention in the form of technology transfer must be carried out by UNESA academics as a form of service and a form of contribution to society. Universities have a strategic role in supporting the development of small industries through research, as well as community service.
