In fact sushi is made from Japanese rice mixed with gluten. Again gluten as the main ingredient to create flavorings similar to animal foods. Tri said gluten is usually adjusted to the type of food available. It could be gluten mixed with young jackfruit breadfruit or mushrooms to make artificial flour that is more fibrous.
