Unesa.ac.id. SURABAYA—In order to support the sustainability and development of micro, small and medium enterprises or MSMEs, a team of Surabaya State University (UNESA) lecturers innovated an automatic presto machine that can improve the quality and productivity of presto businesses.
The machine innovation was designed by a community service team consisting of Sri Handajani as chairman, whose members were Bellina Yunitasari; and Raden Roro Hapsari Peni Agustin Tjahyaningtijas.
Chairman of PKM, Sri Handajani said, this automatic pressure machine is equipped with a temperature, pressure and time control system that has passed function tests so it is ready for use by partners.
This machine is able to increase production capabilities, which initially could only produce 5 kg per presto process, with 1 working day (12 hours) producing 20 kg. This machine can produce 15 kg for each presto process with the assumption that 1 working day (12 hours) can produce 50-60 kg.
With the support of technology and ongoing assistance, local presto food businesses are now increasingly optimistic about facing market challenges. This automatic pressure machine is a new milestone in the transformation of small businesses towards more organized and professional industrialization.

This innovation is able to optimize the cooking process by automatically regulating temperature and pressure, so that production results are more consistent, hygienic and efficient.
The use of this machine also has a significant impact on product quality. A more controlled process ensures that the texture and taste of presto food products is maintained, so that they are able to compete in local and national markets.
"This machine is designed according to the needs of MSME players. The machine is simple, but effective, which not only increases production capacity, but also helps business actors maintain the quality standards of their products," he said.
Following the presence of this innovation, the PKM team also provides technical training so that they are able to operate and maintain the machine well. Apart from that, marketing assistance is also provided to help MSMEs take advantage of wider market opportunities.
This program is expected to be a solution to the challenges faced by MSME players in the food sector, especially in meeting increasing market demand, without sacrificing quality.
This innovation is beneficial for MSMEs. Solikhah, one of the pressure cooker food entrepreneurs who is a partner, said that the machine helped him speed up the production process.
"Previously, we had to monitor temperature and pressure manually, which was often time-consuming and error-prone. Now, the results are much more stable and energy efficient," he said.[*]
